     Vegan Chili

Ingredients
olive oil
1 medium onion / 3 cloves garlic, both chopped
5 bay leaves
1 tsp. ground cumin
2 Tbsp. oregano
1/4 cup chili powder / cayenne pepper to taste
1 Tbsp. salt / 1 Tbsp. black pepper
2 green bell peppers, chopped
1 yellow or red bell pepper, chopped
 
4 stalks celery, chopped
2 - 4oz. cans chopped green chili (drained)
2 packages vegan burger crumbles
2 jalapenos, chopped
1 can Rotel
1 can diced tomatoes and 1 can stewed tomatoes
1 - 15oz. can garbanzo beans (drained)
2 - 15oz. can pinto beans
1 - 15oz. can corn

Instructions
Heat olive oil in large pot over medium heat. Stir in the onion, bay leaves, cumin, oregano, and salt. Cook until onion is tender, then mix in celery, bell peppers, jalapenos, garlic, and green chili. When vegetables are heated, mix in burger crumbles and saute for about 5 minutes.
Add pinto beans, garbanzo beans, Rotel, tomatoes, chili powder, and black pepper. Bring to a boil, reduce heat to low, and simmer for 45 minutes.
Stir in the corn and continue cooking for 5-10 minutes.
