     Blueberry Zest Muffins

Ingredients
1/4 cup coconut flour
1 packet or scoop of perfect fit protein (can substitute other protein powders)
3 eggs
2 tbs coconut oil
3 tbs lemon zest
1 tbs lemon juice
1/4 teaspoon baking powder
1/4 teaspoon of sea salt
 

Instructions
-Preheat oven to 400 degrees -Mix together eggs, coconut oil, lemon juice and zest in a small bowl, either with a hand mixer or a blender -In a separate bowl combine perfect fit, coconut flour, baking powder, salt and mix thoroughly
-Next, combine dry ingredients into the wet batter and mix or blend well until there are no lumps
-Fold blueberries into batter right before pouring into sprayed muffin tins. -Back for 15-20 minutes or until center is cooked.
Serving Suggestions
Makes 6 muffins. One serving = 1-2 muffins, depending on size
