     Healthier Lemon Artichoke Dip

Ingredients
1 14-oz. can artichoke hearts in water, drained
1 lemon, zested and juiced
3 cloves garlic
1 cup Greek yogurt
1/2 cup white beans, drained and rinsed
1/4 cup fresh parsley, plus more for garnish
2 tablespoons Parmesan cheese
Salt
Fresh-ground black pepper
 

Instructions
Combine all ingredients in a food processor or blender, and pulse until fully combined. Pulse longer for a smoother, creamier dip.
Serve with rice crackers, pita chips, pita bread, fresh veggies...the options are nearly endless.
