     Pumpkin, Spinach & Parmesan Tart

Ingredients
2 sheets frozen pastry
200-300g pumpkin, 2cm cubes
2-3 rashers bacon, chopped
Small onion, diced
100-200g mushrooms, sliced
1/4 teaspoon ground coriander
1 tablespoon sage
4 eggs
1/4 cup milk
 
Baby spinach leaves
1/2 cup Parmesan cheese, grated

Instructions
Heat oven 200C. Place pumpkin and onion, tossed in oil and sprinkled with coriander and sage on oven tray 10-15 mins
Whisk eggs, milk and cheese.
Arrange veggies on pastry and pour over egg mixture.
Bake for 35-40 mins until just set.
