     Strawberry Butter

Ingredients
8 ounces (2 sticks) room-temperature butter
1/2 cup confectioners' sugar, or to taste
1 cup washed, hulled, and chopped fresh or drained, frozen strawberries
 

Instructions
In a mixing bowl, beat butter and confectioners' sugar until light and fluffy, at least 1 minute. Add in strawberries and mix to combine. Place the mixture in a mold or use a melon scoop to make balls, cover and refrigerate until you are ready to use. it is best to serve at room temperature because it spreads easily. If you do not plan to use it for a while, you can roll it into a log and wrap in plastic wrap. You may freeze it for up to two months, slicing off the amount you need and returning the rest to the freezer. Always let it come to room temperature before serving. This is delicious on rolls, pancakes, waffles, biscuits, bagels, English muffins, and almost any other bread.
