     Sour cream chicken enchiladas

Ingredients
1 pound boneless chicken breast shredded
1 cup sour cream
1 small onion, chopped
1 tablespoon vegetable oil
6 flour tortillas
1 1/2 cups Mexican blend cheese, divided
1/4 cup butter
1/4 cup flour
1 can chicken broth 15oz
 
1 can chopped green chilies

Instructions
Preheat oven to 400 degrees. In frying pan cook chicken and onion together over medium heat until chicken is just done. Divide cooked chicken and spread into tortillas coating with cheese. Roll enchiladas and place in greased baking dish, seam side down.
Melt butter in saucepan and add flour to make roux. Cook until bubbly. Gradually add in chicken broth and bring to boil, stirring frequently. Remove from heat; stir in sour cream and chilies. Pour sauce over enchiladas, topping with cheese and baking for 20 minutes at 400 degrees.
