     Fresh Fruit Trifle (AKA Anne's Trifle)

Ingredients
CUSTARD
1/3 c sugar
1/4 c cornstarch
1/4 c egg substitute
1/4 c lemon juice
1/4 salt
2 c skim milk
2 8 oz cartons vanilla yogurt (lowfat or non-fat)
1 t grated lemon rind (optional)
 
Other Ingredients
1 angel food cake cut in small cubes
Assorted fresh fruit (bananas, berries, pineapple, work best)
Whipped cream

Instructions
Combine sugar, cornstarch, and salt in a saucepan. Gradually add milk. Cook over medium heat until mixture thickens. Stirring constantly. Remove from heat. Gradually add egg substitute stirring constantly with wire whisk. Cook over med-low heat 2 minutes stirring constantly. Remove from heat. Cool slightly.
Stir in lemon rind and juice. Chill. Fold yogurt into custard mixture.
To assemble trifle, place a third of the angel food cake cubes in bottom of trifle bowl. Cover with 1/3 of custard. Add 1/3 of fresh fruit. Repeat layers, ending with fruit.
Top with whipped cream and a few pieces of fresh fruit. (Raspberries look very nice on top especially at Christmas)
