preheat oven to 350 degrees
Coat bottom of dish with olive oil spray
Brown beef, onions, and peppers, drain well
Add spinach to beef and mix
salt and pepper to taste
put in pan, sprinkle with cheese
Beat eggs, salt and pepper to taste
Pour over beef mixture.
Bake at 350 degrees for 15-20 minutes. Let set 5 minutes before serving.
