     Ezell's Fish Camp Hush Puppies

Ingredients
1 1/4 cup self-rising flour
1 1/4 cup self-rising white cornmeal
1 tablespoon sugar
1/2 teaspoon seasoned salt
1/2 teaspoon garlic powder
1/4 teaspoon freshly ground pepper
1 cup buttermilk
1/2 cup whole kernel corn
1 large egg, lightly beaten
 
2 1/2 cups finely chopped onion
1 plum tomato, finely chopped
vegetable oil

Instructions
Combine first 6 ingredients in a large bowl; stir well. Combine buttermilk,corn, and egg; add to dry ingredients, stirring just until moistened. Stir in onion and tomato.
Pour oil to a depth of 2 inches into a Dutch oven; heat to 375 degrees. Drop batter by rounded teaspoonfuls, in batches, into hot oil. Fry 2 minutes or until golden, turning once. Drain on a wire rack over paper towels.
Diner secret- Keep a can of beer handy. Stir in a little if the hush puppy batter is stiff.
