     MEXICAN STYLE MOSAIC JELL-O

Ingredients
Jell-o in 3 or 4 different flavors. I used Strawberry, Lime, Peach
1 can of condensed milk
1 can of evaporated milk
1 box of Knox unflavored gelatin
I buy the one with 4 envelopes in it.
1 tsp. Vanilla extract
½ c. water
 

Instructions
Prepare the flavored Jell-o per box instructions except with ½ of the water called for per box. Ex- The box says 2 cups cold water 2 cups hot water. I only used 2 cups hot water. Place each Jell-o in separate containers and refrigerate for at least 2 hours. Cut into square pieces and set aside.
Combine 3 envelopes of unflavored gelatin into a half a cup of water. Quickly place in microwave for 15 seconds,ONLY. As soon as the microwave beeps, be ready to mix with a fork until gelatin looks completely dissolved. In a blender quickly mix condensed, evaporated milk, vanilla and the unflavored gelatin. While everything is in the blender place your previously set square cut Jell-o into a greased Jell-o mold. Pour blender contents over the Jell-o and refrigerate for another 2 hours. Yumm. So how do you get the Jell-o out of the mold you might ask? Easy- since you greased the pan it should not be stuck to the bottom. If it does appear to be a little stuck, dip the bottom of the mold in hot water for about 4 seconds. No longer than that! Place a large plate upside down over the mold. Using both hands hold on to both the mold and plate and flip.
