     RHUBERRY SALAD

Ingredients
3 c. cut up rhubarb
¼ c. Water
3 oz. package raspberry Jell-O
¾ c. sugar
¾ c. cold water
1 c. diced celery
1 c. nuts, chopped
 

Instructions
Cook rhubarb slowly with ¼ c. water over very low heat until rhubarb is tender and falls apart. Add Jell-o and ¾ c. sugar. Stir until dissolved and cool until mixture starts to thicken. Add celery and nuts. Chill until firm. This will be somewhat tart. Adjust sweetness to your family’s tolerance level.
