melt butter in soup pot over medium-low.
stir in onions (1 min).
add chicken broth.
cover pot, raise heat to high, bring to boil.
MEANWHILE-
cut potatoes into bite size pieces.
when the broth boils, whisk in the cheese.
reduce heat to medium and continue whisking until cheese melts.
stir in potatoes, sour cream, bacon bits, black pepper.
simmer 5 minutes, stirring occasionally.
SERVE!
