     Black Bean Soup

Ingredients
1 teaspoon olive oil
3/4 cups chopped onions
2 cans (15 o each) black beans
1 can (14.5o) fat-free chicken broth
1 can corn
1 can mexican style stewed tomatoes
3 bay leaves
1 teaspoon minced garlic
1 teaspoon thyme
 
1 teaspoon balsamic vinegar
1/2 teaspoon cumin

Instructions
heat oil in soup pot over medium heat. Add onions and cook until slightly brown.
MEANWHILE - pour 1 can of beans into a bowl. MASH until pasty.
Raise hear to high and add chicken broth, mashed beans, and can of whole beans. stir well. drain corn and add to the pot, then add the stewed tomatoes, bay leaves, garlic, thyme, vinegar, and cumin. cover and bring to a boil.
reduce hear to low and simmer to let the flavors blend, 8 minutes, stirring often to prevent sticking. remove and serve.
