     Hearty Mushroom & Barley Soup

Ingredients
1 lb mushrooms (at least)
1/2 stick butter (1/4lb)
l large onion rough chop
l leek (white & pale green parts chopped)
2 large potatoes peeled and diced
3 carrots chopped
8 cups of broth (mix chicken and beef) low sodium
1 cup water
3 bay leaves
 
3/4 cup pearl barley

Instructions
Saute sliced mushrooms, leek and onion in butter. Add broth,potatoes,carrot, water and bay leaves. Bring to boil and then simmer for 2 hours. Remove bay leaves and season with salt and pepper.
