     Asparagus dip

1/4 c sour cream
1 hard-boiled egg
1 T fresh flat-leaf parsley, chopped
2 t fresh lemon juice
1/2 t Dijon mustard
1/4 t finely grated fresh lemon zest
1/8 t freshly ground black pepper

In a small blow, combine sour cream, chopped egg, parsley, lemon juice, mustard, lemon zest and pepper. Add salt to taste. Serve with chilled, cooked asparagus.
