     Mango Pomelo Sago

Ingredients
Mango (3 large ripe mangoes - cubed)
Mango Juice (Marigold or from Costco)
Pomelo (peeled and sacs separated)
Sugar (5 tbsp)
Coconut milk (150ml)
Sago (100g)
 

Instructions
1. Boil a pot of water. Add sago and simmer to boil for about 10 minutes. Turn off the stove, cover the pot with lid and let the sago continue to cook on its own for about 10 minutes, until all the sago turns translucent. (note- stirring often to prevent sticking and burning) Run the cooked sago through a fine sieve and drain and rinse the sago under running water until cool to remove excess starch. Drain and set aside.
2. Dissolve sugar in coconut milk
3. Add (1) - (2) with mango cubes, mango juice, pomelo. Stir to combine. Mix in the sago pearls
4. Chill well before serving
