     Chicken- Sesame Brown Rice Salad w/Chicken-Peanuts

Ingredients
1 c. long-grain broce rice
2 c. shredded cooked chicken breast
1/2 c. shredded carrot
1/3 c. sliced green onions
1/4 peanuts, divided
1 T. chopped fresh cilantro, divided
1/2 tsp. salt
2 T. fresh lime juice
4 tsp. canola oil
 
1 tsp. dark sesame oil
2 garlice cloves, minced

Instructions
Cook rice according to package directions. Transfer to large bowl; fluff with fork. Cool.
Add chicken, carrot, onion, 2 T. peanuts, 2 tsp. cilantro, salt. Toss to combine.
Combine juice and remaining ingredients in small bowl. Drizzle over rice mixture; toss to combine.
Place 1 1/2 c. salad on each of 4 plates. Sprinkle with 1 1/2 tsp. remaining peanuts and 1/4 tsp. remaining cilantro.
Serving Suggestions
Yield- 4 servings. 393 CALS; 13.3g FAT; 27.8g PROTEIN; 40.2g CARB; 4g FIBER
