     Cafe Mocha Cupcakes

Ingredients
2 tablespoons plus 2 teaspoons instant coffee granules, divided
1 1/3 cups plus 1 tablespoon water, divided
1 package (about 18 oz) devil's food cake mix
3 eggs
1/3 cup canola oil
1 container (8 oz) frozen whipped topping, thawed
Cocoa powder
 

Instructions
1) Preheat oven to 350 F. Line 24 standard (2 1/2-inch) muffin cups with paper baking cups.
2) Whisk 2 tablespoons coffee granules in 1 1/3 cups water in large bowl until dissolved. Add cake mix, eggs and oil; beat with electric mixer at low speed for 30 seconds. Beat at medium speed for 2 minutes, scraping bowl occasionally. Spoon evenly into prepared muffin cups.
3) Bake 15 to 20 minutes or until toothpick inserted into centers comes out clean. Cool in pan 10 minutes. Remove to wire rack; cool completely.
4) Whisk remaining 2 tablespoons coffee granules with 1 tablespoon water in small cup until dissolved. Stir coffee mix into whipped topping until well blended. 5) Frost cupcakes; sprinkle with cocoa. Serve immediately or cover and refrigerate until ready to serve.
