     Pink Lemonade Cupcakes

Ingredients
1 package (about 18 oz) white cake mix, without pudding in the mix
1 cup water
3 egg whites
1/3 cup plus 1/4 cup frozen pink lemonade concentrate, divided
2 tablespoons vegetable oil
5 to 8 drops red food coloring, divided
4 cups powdered sugar
1/3 cup butter, softened
Lemon slice candies (optional)
 

Instructions
1) Preheat oven to 350 F. Line 24 standard (2 1/2-inch) muffin cups with paper baking cups.
2) Beat cake mix, water, egg whites, 1/3 cup lemonade concentrate, oil and 4 to 6 drops red food coloring in large bowl at medium speed until well blended. Spoon evenly into prepared muffin cups. 3) Bake 20 minutes or until toothpick inserted into centers comes out clean. Cool in pan 10 minutes. Remove to wire rack; cool completely.
4) Beat powdered sugar, butter and remaining 1/4 cup lemonade concentrate in medium bowl at medium speed until well blended. Beat in remaining 1 to 2 drops red food coloring until desired shade is reached.
5) Frost cupcakes; garnish with candies. Tip- To make these colorful cupcakes look even more like glasses of refreshing pink lemonade, you can trim bendable plastic straws to fit and press them into the top of the cupcakes.
