2) Combine cocoa and espresso powder in small bowl. Whisk in boiling water until coca is dissolved. Add chocolate; whisk until melted. Combine flour, baking soda and salt in medium bowl; mix well. Beat granulated sugar and butter in large bowl at medium speed for 2 to 3 minutes, or until fluffy and light. Add eggs, one at a time, beating well after each addition. Stir in vanilla and chocolate mix until combined. Alternately add flour mix and sour cream, beating at low after each addition until just combined. Spoon evenly into prepared muffin cups.
