     Butter bean lemon cake

Ingredients
For the Cake
1 tin of butterbeans
3 eggs
1oz sweetener
1tsp baking powder
3 -4 tsp lemon flavouring
for topping and/or filling-
 
quark
sweetener to taste
lots of fresh fruit

Instructions
Mix all ingrediences for the cake in a food processor until smooth. Transfer to a baking tin. Put in a preheated oven(160C ) for about 20-30 min until cooked through.
Leave to cool for an hour. Whilst cooling mix the topping ingredients together.
Top with the quark and fruit. Serve immediatley.
