     Crazy Colors Cupcakes

Ingredients
1 package (about 18 oz.) white cake mix
1 cup sour cream
3 eggs
1/2 cup vegetable oil
Gel food coloring (4 colors)
1 container (16 oz.) white or cream cheese frosting
Mini rainbow candy-coated chocolate chips
 

Instructions
1) Preheat oven to 350 F. Line 20 standard (2 1/2-inch) muffin cups with paper baking cups.
2) Beat cake mix, sour cream, eggs and oil in large bowl at low speed for 30 seconds. Beat at medium speed for 2 minutes or until well blended. Divide batter evenly among four medium bowls. Stir food coloring into each bowl, a few drops at a time, until well blended and uniform in color. (Batter colors should be strong to retain color after baking.)
3) Spoon 2 teaspoons of one color batter into each prepared cup; spread to edge of cup with back of spoon or dampened fingers. Top with second color batter, making sure to completely cover first layer. Repeat with remaining two colors of batter. (Id desired, switch order of colored layers halfway through assembly.)
4) Bake 18 to 20 minutes or until toothpick inserted into centers comes out clean. Cool in pan 10 minutes. Remove to wire rack; cool completely. 5) Frost cupcakes; decorate with rainbow chips. Tip- Use as few or as many colors you like for the rainbow layers and adjust the amount of batter in each cup accordingly.
