     Shepherd’s Pie with Cheese Curd (Pâté Chinois)

Ingredients
3 potatoes
2 tbsp (30 ml) milk
1 tsp (5 mL) oil or Olive oil
1/2 onion, finely chopped
8 oz (227 g) lean ground beef
Salt (to taste)
Pepper (to taste )
8 oz (227 g) cream corn
Paprika
 

Instructions
- In a small saucepan, boil a small amount of salted water to cook the potatoes. -Peel the potatoes by removing a very thin skin. -Rinse and cut into halves or quarters -Dip the potatoes in boiling salted water and cook until tender. -Meanwhile, peel and chop the onion.
- In a skillet, saute onion in oil until tender. - Add ground beef and cook until there is no trace of pink flesh. - Remove excess fat. Put salt and meat in a small ovenproof dish.
- Spread cream corn on the meat - Preheat oven to 190C (350 F). - Drain the potatoes. - Mash the potatoes with a potato masher.
- Add milk and beat well with a pestle to make a very light puree. - Cover the ground beef and creamed corn mashed potatoes, using a rubber spatula. - Sprinkle with paprika and bake for about 25 minutes until the top is golden.
