     Beef Tenderloin- Asian-Style Salad

Ingredients
DRESSING
1 T. fresh lime juice
1 T. rice vinegar
1 tsp. granulated sugar
1 1/2 tsp. hot chile sauce
1 tsp. fish sauce
1/4 tsp. sesame oil
SALAD
2 (6-oz.) beef tenderloin steaks
 
1/4 tsp. salt
1/8 tsp. freshly ground black pepper
Cooking spray
6 c. torn red leaf lettuce
1 1/2 c. thinly sliced English cucumber
1/4 c. chopped fresh cilantro
1/4 c. thinly sliced shallots (about 2 small)
2 T. thinly sliced fresh basil

Instructions
Combine first 6 ingredients in small bowl, stirring with whisk.
Prepare grill. Sprinkle both sides of steak with salt and pepper. Place steak on grill coated with cooking spray; grill 4 mins. on each side or until desired degree of doneness. Let stand 5 mins. cut steak diagonally across grain into thin slices.
Combine lettuce and remaining ingredients in large bowl. Add steak. Drizzle dressing over and toss to coat. Serve immediately.
Serving Suggestions
Yield- 4 servings (size = 2 c.)
