     Scallops in Italian sauce

Ingredients
Butter (2 tablespoon)
Shallot (3 tablespoon)
4 lbs of scallops (with lemon juice)
5 cup of sliced mushrooms
6 cup chicken broth
Lemon Juice
Salt (1 teaspoon)
Pepper (1 teaspoon)
Flour (2 tablespoon)
 
35pct Cream (1 tablespoon)
Chives (1 teaspoon) (optional)
Rice or Noodle (optional)

Instructions
1) In a heavy skillet, melt butter. Add the shallots, scallops, mushrooms, broth, lemon juice, salt and pepper. Allow heat to boiling. 2) Reduce the heat and continue cooking over low heat for 5 minutes or until scallops are tender. Do not over cook ness as they harden.
3) Remove scallops and mushrooms with a slotted spoon and keep warm. Continue cooking over high heat to reduce by half the cooking liquid.
4) Mix 1 tsp of butter and flour. Gradually add the hot mixture, stirring constantly until sauce is thick and smooth. 5) Add cream and bring to a boil without boiling. 6) Remove from heat
7) Put back scallops and mushrooms, add chives. 8) Serve immediately with hot noodles or rice.
