zest lemons to make 1 tbsp. juice lemons to
measure 1/4 cup. Break noodles in half. Combine
noodles, broth, and lemon juice in deep covered
baker. microwave, covered, on high for 11-13
minutes, or until most of the liquid is absorbed.
stir halfway through cooking time.
Cut tomatoes in half. In a food processor, process
garlic, parmesan, parsley, lemon zest, oil, and
pepper until finely chopped.
Carefully remove baker from microwave. Add parmesan
mixture and stir. Stir in tomatoes, chicken, and
broccoli. Microwave, covered, on high 3 minutes.
HINT- i did not have fresh parsley so i just used
fresh basil and sage with dried parsley. you can use
whatever herbs you have on hand.
