Handfull of fettucini pasta, or whatever type of pasta you want
4 strips of quality bacon, chopped
White Wine
Baby spinach leaves, washed
Cherry tomatoes
Half and Half
Garlic
Olive oil
Salt and pepper to taster
Parmesean cheese, if desired
Instructions
1) Boil pasta, cover and set aside.
2) In a non-stick pan, add a teaspoon of olive oil and bacon. When fat has released and bacon is just shy of crisping, add garlic. Cook for 30 seconds, until fragrant, then add a splash of white wine.
3) After 1 minute, add cherry tomatoes. Cover pan and allow tomatoes to steam to a point where they're tender and begin to fall apart.
4) Add spinach and salt and pepper to taste.
5) Add half and half and allow to come to a simmer.
6) Stir in pasta; remove from heat. Sprinkle on parmesean cheese, if desired.
