     Lemon-Cilantro Slaw

Ingredients
1 tablespoon lemon juice
1 1/2 teaspoons olive oil or canola oil
1/4 teaspoon sugar substitute
1/4 teaspoon dijon style mustard
ground black pepper
salt
2 cups sliced thin cabbage
1/2 cup shredded carrots
1 tablespoon snipped fresh cilantro
 
1 tablespoon chopped green onion

Instructions
IN A MEDIUM BOWL, WHISK TOGETHER LEMON JUICE, OIL, SUGAR SUBSTITUTE, MUSTARD, AND PEPPER. ADD COLESLAW MIX, CILANTRO AND GREEN ONION
TOSS INGREDIENTS GENTLY TO COAT - COVER AND CHILL FOR 2 -24 HOURS BEFORE SERVING
MAKES 2 SERVINGS - 1 CUP EACH
