     Chocolate Chip Coconut Protein Cookies

Ingredients
1 large egg
1/2 cup Protein Power (I used 1 scoop MuscleTech Phase 8 and 1/2 scoop Costco Chocolate Whey)
1/4 cup Coconut Flour
1/2 tsp Baking Soda
1/4 cup Unsweetended Coconut (flakes or shreds)
3/4 cup Almond Milk Unsweetened
1 oz Ground Cashews
2 tbsp Semi Sweet Chocolate Chips
 

Instructions
1. Preheat oven to 340 degrees F. 2. Grind cashews if not already ground (I used the Magic Bullet) 3. Mix together egg, nuts, protein powder, coconut flour, baking soda, coconut and milk. 4. Once consistent texture, stir in chocolate chips. 5. Place 12 even balls of dough onto a sprayed cookie pan/sheet. 6. Bake for 15-18 minutes, checking at 15 mins. 7. Cool and enjoy!

The recipe called for Brazil nuts but we used ground cashews. Any nut could be substituted and oats could be substituted instead of coconut flour. Turned out amazing! Thinking about using almonds and almond extract instead next time.

With a tall glass of almond milk!
