     Mexicorn Casserole

Ingredients
1 can creamed corn
2 cans sweet corn, drained
2 eggs
2 sticks melted butter
2 boxes Jiffy cornbread mix
2 cups sour cream
1 lb. ground beef
1 pkg. taco seasoning
3/4 cup water
 
1 can Rotel tomatoes w/green chiles, drained
2 cups cheddar cheese, shredded

Instructions
Brown ground beef and drain. Add taco seasoning and water. Continue cooking until mixture thickens.
Combine all ingredients in large bowl and mix well.
Pour into greased casserole dish (deep dish 9x13 or separate into two pans).
Bake at 350 degrees for about 1 hour until puffy and lightly browned. (Knife inserted in center should come out clean.) NOTE- Can cut recipe in half but still needs to bake for 1 hour.
Serving Suggestions
Top each serving with additional sour cream, salsa, or sliced jalapeno peppers, if desired.
