Cut cauliflower into 2 inch pieces. Put into a food processor.
Put grated cauliflower into microwaveable bowl. Add 1 tbs water. Microwave on high for 2-3 minutes.
Add butter, salt and pepper to taste.
Some people don't add the water since cauliflower steams itself but I enjoy a stickier, softer rice and the water seems to help.

Suggestions
Serve with your favorite entree. The spicier the better to mask the cauliflower flavor.
