     Barbacoa Lettuce Wraps 4HB

Ingredients
1/8 cup apple cider vinegar
2 teaspoons minced garlic cloves
2 teaspoons cumin
1 teaspoons oregano
1/2 teaspoon ground black pepper
1/2 teaspoon salt
1/2 teaspoon ground cloves
1 tablespoons olive oil
1/2 cup chicken broth
 
1 bay leaf
1 1/2 tablespoons lime juice
1/2 teaspoon cayenne pepper
1 teaspoon adobo powder
1/2 teaspoon cilantro
1/2 teaspoon red pepper flakes
2 chipotle chiles in adobo
2 lbs chuck roast or pork
Lettuce for wraps

Instructions
To make the sauce combine vinegar, lime juice, adobo, cayenne, cilantro, red pepper flakes, garlic, cumin, oregano, black pepper, salt and cloves in a bowl. Cut roast or pork into large chunks. Pour oil into a frying pan and sear all sides of meat on medium-high heat until browned. Place meat into crockpot and pour sauce over meat. Pour in the chicken broth and add bay leaves and chilies. Cook on high heat for at least 6 hours Shred the meat in the crockpot and serve with lettuce as a wrap.
Serving Suggestions
Serve with lettuce, hot sauce, and refried or black beans/ veggies. Ignore the broccoli in the wrap in the picture. (Husband is weird)
