     Salad Dressing Anchovy, olive and caper dressing

Ingredients
white wine vinegar - 1½ tbsp
garlic - 2 cloves grated
olive oil - 4½ tbsp
parsley - ½ tbsp finely chopped flat-leaf
capers - ½ tbsp rinsed of salt or brine and chopped
anchovies - 4 drained of oil and chopped
olives - 5 black pitted and finely chopped
 

Instructions
Mix together everything, then taste. Adjust the seasoning according to what you are going to dress – hard-boiled eggs and potatoes can take a well- seasoned dressing (you may even want to add a squeeze of lemon). If you are using it to dress tomatoes it shouldn't be quite as sharp.
This is good on tomatoes, warm waxy potatoes (with chopped shallots), roast peppers and warm hard- boiled eggs.
