     spinach veggie burgers

Ingredients
130g fresh spinach leaves, finely chopped
1 and half spring onions, trimmed and finely sliced
130g breadcrumbs, 3 slices of bread blended
75g cheddar, grated
1tsp freshly grated nutmeg
1 lrg egg, beaten
a little plain flour
4 teaspoons olive oil
soft bread rolls to serve
 

Instructions
combine the spinach, spring onion, breadcrumbs, cheddar, nutmeg and egg. mix together and mould into 6 burger patties. the mixture will be slightly sticky.
coat the patties in a little flour, then place in the fridge.
heat the oil in a heavy based frying pan and fry the patties for about 3-4 mins on each side until golden. serve with soft bread rolls.
Serving Suggestions
can also serve with cherry tomatoes or salad
