     Banana and coconut pancakes

Ingredients
1/2 cup of plain flour
1 tablespoon of sugar
1 tablespoon of desiccated coconut
1 small egg
1/3 cup of coconut milk
BANANA SAUCE
2 large bananas
2 Tablespoons of brown sugar
 
teaspoon lime juice

Instructions
1. Place flour,coconut and sugar in a small basin 2. make a well in the center and add beaten egg and coconut milk, beat until smooth 3. heat a non stick frypan on medium heat with some butter or margerine in it 4. pour 1/4 mesuring cup of pancake mixture in to the frypan
5. turn the pancake over when there is bubble coming out of the pancake. 6. transfer to a plate and keep warm by covering with a teatowel.
BANANA SAUCE 1. cut Bananas diagnoly into thick slices.Add some butter or margerine into a fry pan (the same one used for pancakes) 2. Add bananas and toss carfully until they start to go brown.
3. sprinkle with brown sugar and shake pan until sugar is melted.Then stir in the lime juice. THEN serve together put the bananas in or on top of the pancakes.Enjoy
