Ingredients
base
250g digestive biscuits
100g melted butter
4 tbsp brown sugar
topping
2 tubs of cream cheese
2 tubs of mascarpone
5 tbsp castor sugar
 
juice of 1 lrg lemon
1.5 tbsp vanilla essence
punnet of strawberries

Instructions
to make the base, crush the biscuits, add the butter and sugar and press into a round dish. refridgerate for 20 mins.
meanwhile, beat the cream cheese and mascarpone, add the lemon juice and vanilla esesence. then spoon this mixture on top of the chilled biscuit base.
add strawberries to the top and chill.
Serving Suggestions
can substitute for other fruit/berries
