     Multi-Bean Soup (slow-cooker)

Ingredients
8 3/4 cups chicken broth or vegetable broth
1 pkg. (16-20 oz.) dried bean soup mix, sorted and rinsed
4 medium carrots, chopped (2 cups)
2 medium celery stalks, chopped (1 1/2 cups)
1 large onion, chopped (1 cup)
2 Tbsp. tomato paste
1 tsp. salt
1 tsp. Italian seasoning
1/2 tsp. pepper
 
1 can (14.5 oz) diced tomatoes, undrained

Instructions
In slow cooker, mix all ingredients except tomatoes. Cover; cook on low heat setting 8-10 hours. Stir in tomatoes. Increase heat setting to high; cover and cook about 15 minutes longer or until hot.
