     Peach-Custard Pie

Ingredients
1 cup and 5 tbs all-purpose flour
salt
1/3 cup cold vegetable shortening
3 cups peeled and diced fresh peaches or 3 cans of sliced peaches in light syrup drained
1 cup plus 3 tbsp granulated sugar
1 tbsp butter
2 lrg eggs
 

Instructions
Preheat oven 375. in med bowl, with fork mix 1 cup and 2 tbsp flour, 1/2 tsp salt,1/3 cup shortening and 2 tbsp. cold water until dough begins to form. knead 2 to 3 times until dough comes together. shape into ball and dust lightly with flour. with rolling pin roll between 2 sheets waxed paper to 12 inch round. ease dough into 9 inch pie plate chill until ready to use
toss peaches with 3 tbsp. sugar. blend butter, flour, eggs and 1 cup sugar until smooth. stir egg mix with peach mix and pour into pie crust. bake 50 to 55 minutes
