     Banana Bread

Ingredients
1 1/4 Cups Sugar
1/2 Cup ( 1 stick) Butter
2 large eggs
11/2 Cups mashed very ripe bananas ( 3 medium)
1/2 Cup buttermilk
1 teaspoon vanilla
2 1/2 Cups all purpose flour
1 teaspoon baking soda
1 teaspoon salt
 
1 cup chopped nuts if desired
1 cup blueberries if desired

Instructions
preheat oven 350 greese two 8 X 4 inch loaf pans. ( I use sugar instead of flour to coat. But flour works better) In large bowl mix sugar and butter until creamed, stir in eggs one at a time and mix until just combined. Add in Banana's, buttermilk, and vanilla. Mix completely, then stir in flour mixture (flour, soda and salt).
I usually at this point pour into loaf pans. Then stir in blueberries and or nuts. Bake of 1 hour or unitl toothpick comes out clean. Cool 10 minutes, then turn out onto a wire rack. Cool completely for 2 hours then slice. Ours never makes it the 2 hours. HA
