Brown onion, garlic and chopped vegetables in olive oil. Add water, soy sauce, rice and cumin. Stir, bring to a boil, cover and simmer 40-60 minutes or until liquid is absorbed.
While simmering, cook eggs and chicken. Fold these ingredients after liquid is absorbed. Cook until heated through.
Optional Ingredients -
2 cups garbanzo beans, cooked
1/2 cup raisins
1/2 cup cheddar cheese, shredded
