Melt butter, mix with sugar, throw in eggs and beat well. Put extract in with eggs and flour, salt, and baking powder, sifted together. Mix in fruits and then nuts.
Divide into 3 small loaf pans or 2 large loaf pans - almost ful. Fold waxed paper four thicknesses on bottom of pan and grease paper and pan. Bake at 250 degrees about 1 hour 30 minutes.
Place pan of water in oven to keep cakes moist. When cool wrap and store for a few weeks.
