     SPICY TURKEY SAUSAGE WITH BLACK EYED PEAS/SPINACH

Ingredients
1 TBSP OLIVE OIL
1 LB TURKEY KIELBASA - SLICED
1 TSP CHOPPED GARLIC
10 OZ BABY SPINACH
1 CAN DICED TOMATO
1 CAN BLACK-EYED PEAS, DRAINED
1/4 TSP EACH OF BELOW
CAYENNE PEPPPER
PAPRIKA
 
FRESHLY GROUND BLACK PEPPER

Instructions
HEAT OIL IN A LARGE FRYING PAN OVER MEDIUM HIGH HEAT AND ADD SAUSAGE. COOK STIRRING OCCASIONALLY UNTIL BROWNED. STIR IN GARLIC AND COOK UNTIL FRAGRANT, ABOUT 2 MINUTES. TRANSFER SAUSAGE TO A PLATE,THEN ADD REMAINING INGREDIENTS TO PAN AND SIMMER ABOUT 10 MINUTES. RETURN SAUSAGE TO PAN AND SERVE OVER COOKED RICE
