     Sun-Dried Tomato Artichoke Chicken

Ingredients
1 1/2 lbs of boneless chicken, skinless chicken breasts
1/4 cup flour
zip-lock bag
2 tbsps of Canola oil
1/2 cup white wine
6 - 8 sprigs of thyme (I use fresh)
1 lemon
1 14 oz can quartered artichoke hearts
1/3 cup julienne-cut sun-dried tomatoes
 
2 Tbsp of unsalted butter
1/2 tsp of kosher salt
1/8 tsp pepper
2 Tbsp of Parmesan cheese ( Optional)

Instructions
Cut chicken into chunks, place in baggies with flour. Seal & shake bag to coat. Preheat sauté pan for 2-3 minutes. Place oil in pan, swirl to coat. Add chicken and cook 3 minutes turning while it browns. Stir in wine, reduce to low until liquid is absorbed. Remove leaves from stems of thyme and reserve. Squeeze lemon juice of 1/2 of lemon over chicken and add rest of ingredients ( except thyme & cheese) Cover & cook 3 minutes til chicken is done. Stir in thyme and cheese.
Serving Suggestions
I serve over whole wheat pasta
