     Bacon and Potato Fritata

Ingredients
5 eggs
1/2 C bacon crisp cooked and crumbled
1/4 C half-n-half or milk
1/8 t salt
1/8 t black pepper
3T butter
2 C frozen O'Brien Hashbrown potatoes with onions and pepper
 

Instructions
1- Preheat broiler. Beat eggs in medium bowl. Beat in bacon, half- n-half, salt and pepper. Set aside.
2- Melt butter in large ovenproof skillet over medium-high heat. Add potatoes; cook and stir 4 minutes.
3- Pour egg mixture into skillet; reduce heat to medium. Cover and cook 6 minutes or until eggs are set at edges (top will still be wet).
4- Transfer skillet to broiler. Broil 4 inches from heat source 1 to 2 minutes or until golden brown and center is set.
