     Pashtida (Quiche)

Ingredients
250 grams cottage cheese, I use 3% but you can use 5% or even 9%
250 grams white cheese. You can replace with cottage if you cannot get this product
150 grams grated cheese. Use you favorite type
3 beaten eggs
1-2 tablespoons of flour or gluten free flour
500 grams mushrooms or other vegetables
salt and pepper
other spices if you want like parsley etc
 

Instructions
Preheat oven to 180C. Fry or steam the vegetables. I steam broccoli and spinach but fry mushrooms,onions or red peppers. You can do a combination of vegies as well
mix all ingredients besides the vegies and then add the vegies
Place in a silicon or oiled round pie dish and bake till golden. It takes at least 40 mins. CHeck and see how well you like it browned.
You can double the recipe. The photo for this recipe is a doubled one, using vegies I had around the house including mushrooms, tomatoes and eggplant
Serving Suggestions
serve with baby leaf and baby tomato salad
