Ingredients
1 lb Bob Evans Original Recipe Roll Sausage
4 eggs
4 10-inch flour tortillas
2 C (8 oz) shredded Monterey Jack cheese
1/2 C chopped green onions with tops
1/2 C chopped tomato
Sour Cream
Salsa
 

Instructions
1- Crumble sausage into large skillet. Cook over medium heat until sausage is browned, stirring occasionally. Drain off any drippings. Remove sausage to paper towels; set aside.
2- Add eggs to same skillet; scramble until eggs are set but not dry. Remove eggs; set aside.
3- Place 1 tortilla in same skillet. Top with half of each eggs, cheese, sausage, onions and tomato. Heat until cheese melts; top with another tortilla. Remove from skillet; cut into six equal wedges.
4- Repeat with remaining tortillas, eggs, cheese, sausage, onions and tomato to make second quesadilla. 5- Serve hot with sour cream and salsa. Refrigerate leftovers.
