     Chicken Escondido

Ingredients
1 lb boneless, skinless chicken breasts
15 oz black beans, drained and rinsed
16 oz jar salsa verde
1/3 C sundried tomatoes
2 cloves garlic
2T extra virgin olive oil
2 T balsamic vinegar
 

Instructions
1- Cut chicken into bite-sized pieces.
2- Saute tomatoes and garlic in olive oil and vinegar until tender.
3- Add chicken and cook until done 4- Add salsa and black beans
5- Simmer 5 minutes 6- Serve over brown rice
