Preheat oven to 350 degrees. Stir together
sugar, peanut butter, egg and vanilla using a
wooden spoon until well blended. Use a 1
tablespoon measuring spoon to scoop dough,
and shape into 1 inch balls you should have 18
cookies total. Place on ungreased baking
sheets, and bake 9 to 11 minutes or until set.
Cool on baking sheets 3 minutes. Remove to
cooling racks, and cool completely, about 20
minutes. Spread 1 tablespoon chocolatehazelnut
spread over the flat side of
one cookie; top with another cookie. Repeat
procedure with remaining cookies and spread.
