Preheat oven to 350 degrees. Whisk together
both flours, baking soda and salt in a medium
bowl. Combine sugar and oil in a large bowl;
beat with an electric mixer on medium speed
until light in color. Add egg; blend well. Add
flour mixture and banana alternately, beginning
and ending with flour mixture. Stir in vanilla and
walnuts. Pour into an 8x4 inch loaf pan coated
with cooking spray. Bake 40 to 50 minutes or
until a toothpick comes out clean. Cool
completely before slicing. Note- If desired, wrap
extra slices individually in plastic wrap, and
freeze in a zip top plastic freezer bag up to 2
months.
