     Bell Pepper Sauce

Ingredients
1 small red bell pepper, quartered
2 6 oz containers plain Greek yogurt
¼ teaspoon ground coriander
2 tablespoons extra-virgin olive oil
¼ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon ground cumin
3 garlic cloves
 

Instructions
Place bell pepper and 2 tablespoons water in a small bowl covered with plastic wrap; poke 3 holes in plastic wrap. Microwave on HIGH for 5 minutes or until tender. Combine bell pepper, yogurt, oil, coriander, salt, pepper, cumin and garlic in a blender; process until smooth.
